Dr. V.O. Oyetayo is presently a reader (Associate Professor). His area of specialization is Food and Industrial Microbiology. His research focus is in the development of Biotic Foods. His present research is in the following areas:
(a) Assessment of probiotic properties of Lactic Acid Bacteria (LAB) isolated from fermented foods indigenous to Nigeria.
(b) Species delimitation of wild polyporales (macrofungi) indigenous to Nigeria using ITS, TEF1, RPB1 and RPB2 primers.
(c) Assessment of nutraceutical potentials of phytochemicals and zoochemicals obtained from African foods and edible/medicinal macrofungi.
This involves molecular identification of these wild macrofungi, extraction of the bioactives present, and activity guided screening of the bioactives for their potential nutraceutical properties. Dr. Oyetayo has authored over 60 publications.
